Start of Spring is the first solar term of the year, when nature begins to wake up. In Anhui, this moment is celebrated with Lichunguo cakes（立春粿）. Fresh greens are blended into glutinous rice flour, creating a soft, pale green wrapper with a clean, refreshing taste that captures the feeling of spring returning. On Start of Spring, sharing these Lichunguo cakes is known as “biting spring.” One bite welcomes new beginnings, good fortune, and blessings for the seasons to come.
